Homemade ice cream - seriously the most delicious thing ever!!

We have an abundance of milk at the moment.  We have weaned Marmalade's calves, but are still milking her for a few more weeks.   And of course when you have lots of milk - you also have lots of cream!!  So we have been pretty indulgent with our cooking lately - trying to use it up!  

I use to make this recipe for homemade ice cream a lot, but haven't for a while so it was a real treat - and sooooo easy to make!

It literally is just three ingredients; cream, a can of sweetened condensed milk and some vanilla!

I use a cup and half of cream, and whip it well until it is stiff, but not butter obviously!  I am still using my very first mix master, a Kenwood that was a gift from my mother in law.  It still works a treat!  

Then it is simply a matter of folding in the condensed milk and a teaspoon or two of vanilla, to taste. Pour the mixture into a container (I actually use a washed store bought ice-cream container) and freeze it!  About 3-4 hours is enough for it to be well set.

We had some last night on a plum crumble and it was delicious - the texture and taste is so close to store bought ice cream that I'm sure people wouldn't tell the difference if they weren't told!
